The Best Anzac Biscuits Recipe

My kids have been using this Anzac biscuits recipe for years and although I haven’t passed on this recipe to them, it is the same Anzac biscuits recipe I used when I was younger… I have found it the Best Anzac Biscuits recipe yet.

Enjoy… ask your kids to help too!! The joy is in the sampling!!

You will need:

  • 1 cup rolled oats
  • 1 cup plain flour
  • ¾ cup caster sugar
  • 1 cup shredded coconut
  • 125g unsalted butter, chopped
  • 2 tablespoons golden syrup
  • 1 tablespoon boiling water
  • ½ teaspoon bicarb of soda (baking soda)

Method:

  • Preheat the oven to 160ºC.
  • Place the oats, flour, sugar and coconut in a bowl and stir to combine.
  • Place the butter and golden syrup in a small saucepan over low heat and stir until the butter is melted.
  • Place the water and bicarb of soda in a separate bowl and stir to combine. Add this mixture to the butter mixture and stir to combine.
  • Pour the butter mixture over the flour mixture and stir well to combine.
  • Place tablespoons of the mixture onto baking trays lined with non-stick baking paper, allowing room for the biscuits to spread.
  • Flatten slightly and bake for 10-12 minutes or until golden.
  • Allow to cool on trays. Makes 28.
