Date Balls

INGREDIENTS

Makes approx 20-25 depending on how big you make them.

  • 220 grams pitted dried dates
  • 100 grams raw almonds
  • 20 grams raw cashews
  • 2 tsp vanilla extract, or 1/3 vanilla bean
  • 65 grams desiccated coconut
  • 20 grams cocoa powder, optional or raw cacao powder
  • 10 grams coconut oil, optional
  • 2 tablespoons maple syrup

METHOD

Process nuts (& vanilla bean if using) 15 seconds on high-speed in a food processor.

Add remaining ingredients & process 30 seconds on high-speed in a food processor.

Roll into ball shapes & roll in some extra coconut.

If you can’ t be bothered rolling into balls press mixture into a tray & put into the fridge or freezer & slice into squares.
